its speculation. Its very hard to determine how much is hentai. There is plenty of hentai out there, however the majority of anime is not hentai.

I guess hentai sells, on there is over 5000 series listed of which about 50 are hentai. So i dont know how many anime series/movies there are in the world but that would make it about 1%
Its probably quite similar to everywhere else. What percent of movies/tv shows etc in america are porn?
I imagine the persentage would be pretty similar.
If we were talking about manga though i think the persentage would be higher (in relation to non-hentai manga) but im not sure, dont know that much about manga.
